Cashew sweet/kaju katli/kaju barfi/homemade cashew sweet
Cashew katli is a very famous sweet, it is found in every house on festivals. Cashew katli is available at any sweet shop in the market and it is also very easy to make it at home. To make it, only three things are required, cashew, sugar and cardamom powder. Cashew katli is made in two ways, one way. In this, after soaking cashews in hot water, they are made into a paste and after making a paste of dry cashew nuts in another way, today we will make cashew katli by making paste of dried cashew in another way, so let's make cashew katli.

Ingredients for making Kaju Katli
, 2 cups cashews
, 1 cup sugar
, 1 cup water
, 2 tsp ghee
, Silver Work (Opsonal)
, 1/2 tsp cardamom powder (optional)
How to make Kaju Katli
First of all, keep in mind that cashew, sugar and water should be measured in the same cup.
Take a jar of mixi, add cashew nuts to it and make a smooth paste.
Now put 1 cup of sugar in a nonstick pan and add 1 cup of water and cook on low flame till the sugar dissolves
When the sugar dissolves, add cardamom powder to it.
Cook the syrup for 8 minutes on low flame, neither should the syrup be too thick nor thin, just make a sticky syrup.
Now put the cashew mixture in the syrup and cook on low flame for 12 minutes while stirring continuously or till the mixture leaves the pan.
When the mixture starts leaving the pan and the consistency starts to set, switch off the gas.
Grease a plate with ghee and pour cashew mixture over it and let it cool slightly.
When the cashew paste cools down a bit, it becomes so cool that you can lift it with your hands, then knead it a little with your hands and take it out on the butter paper. Roll according to your choice (do rolling quickly before the mixture cools down)
Now put silver work on the barfi and keep it for 1 hour.
When the barfi is frozen, cut it into diamond shape with a sharp knife.
Tips
.Do not make the syrup too thick otherwise the barfi will not become soft
You will get silver work from any grocery shop or online
.If you do not have butter paper then apply ghee on the rolling pin and roll the mixture
Do the rolling as soon as the mixture is hot.
.If you have a nonstick pan, use the same.
